Pan-Fried Green Gyoza with Crushed Potatoes and Chive Cream

Ingredients for 100 portions:

  • 400 pcs Yumbau Green Gyoza (frozen)
  • 25 kg potatoes (floury variety)
  • 5 l whole milk or plant-based milk
  • 500 g butter or margarine
  • 2 kg chives (frozen or fresh)
  • 1 l sour cream or crème fraîche
  • Salt, pepper, nutmeg

Preparation:

  1. Peel and cook potatoes, then process into a rustic crush – not too smooth, to retain texture.
  2. Finely chop chives, stir into sour cream, season with salt and pepper.
  3. Pan-fry gyoza until crispy.
  4. Plate the crushed potatoes, lean gyoza against them, serve chive cream in a small sauce boat alongside or pour directly over.
