Gyoza Pan with Peppers and Leek in a Garlic Sauce Base

Ingredients for 100 portions:

  • 500 pcs Yumbau Yellow Gyoza (frozen)
  • 10 kg peppers (red, yellow, green – mixed)
  • 6 kg leek, cut into rings
  • 4 kg mushrooms (frozen or fresh)
  • 3 kg onions
  • 200 g garlic
  • 500 ml soy sauce
  • 200 ml sunflower oil
  • Salt, pepper, chilli flakes to taste

Preparation:

  1. Sweat onions and garlic in hot oil.
  2. Add mushrooms and sauté, then add peppers and leek, cook until al dente.
  3. Season to taste with soy sauce and spices.
  4. Pan-fry gyoza separately in a frying pan or on a flat-top grill until crispy.
  5. Arrange gyoza on top of the vegetable stir-fry and serve immediately.

Tip: Affordable baguette or flatbread makes an ideal accompaniment to round out the meal – both are easy to budget for in large-scale catering.
