Orange Gyoza Stew with Lentils and Root Vegetables

Ingredients for 100 portions:

  • 500 pcs Yumbau Orange Gyoza (frozen)
  • 8 kg red lentils
  • 6 kg carrots, diced
  • 4 kg celeriac, diced
  • 3 kg parsnips, diced
  • 3 kg onions
  • 200 g garlic
  • 20 l vegetable stock
  • Thyme, bay leaf, salt, pepper, turmeric

Preparation:

  1. Sweat onions and garlic in oil, add root vegetables and briefly sauté.
  2. Add red lentils and vegetable stock, season with herbs and turmeric.
  3. Simmer for approx. 20 minutes until lentils become creamy.
  4. Cook gyoza in a combi steamer and add to the stew in portions.
  5. Serve in deep plates.

Tip: Red lentils require no soaking and have a very short cooking time – this considerably streamlines the production workflow in large-scale kitchens. Parsnips and celeriac are classic German root vegetables and very affordable in season.
